About Founders

Jesus Galvez Bio Jesus Galvez is a seasoned entrepreneur with over 20 years of experience in the restaurant industry. As the founder of Sol Agave, he has demonstrated a deep passion for hospitality and a keen eye for culinary excellence. With a vision to revolutionize the dining experience, Jesus has embarked on a new venture in the form of a casual steakhouse, where he combines his expertise in design and food culture. Alongside a talented chef Oscar Perez they have co-created the acclaimed Blind Rabbit Kitchen, showcasing innovation and creativity in every dish.


Chef Oscar Perez Oscar Perez is an accomplished executive chef whose culinary journey began several years ago. He honed his skills at a variety of esteemed restaurants in Southern California, including Elephant Bar, the Cheesecake Factory, BeachFire Grill, and Nick’s Hospitality. In 2015, he realized his dream of owning food trucks with Maiz Cocina & Sol Agave, where he introduced a modern twist to Mexican cuisine while staying true to the rich flavors of Cuernavaca, Morelos. Oscar Perez believes in making well-rounded, complex food even more so by infusing it with modern techniques and flavors. He strives to create dishes that are not only enjoyable but also leave diners craving more.
